my impressions of  refidgeration in the modern world

root cellars I have known
I have a machine in my house.the largest appliance in my house that causes refrigeration to occur through electricity.An idea so new that my grandmother could never fully grasp it,although ,she was so impressed with the shear size and scope of the machine that she readily shared her kitchen with it.She even used that mass to hide and store forbidden items.but I digress.
I have such a machine ,it is a second hand fridgidare, a massive over-under.That means ,that the freezer is on the bottom so it is actualy upside down.Traditional refrigerators force you to bend down and immerse yourself into the bowels of the beast..Mine just swallows me up when I step into the light that provides me with satiation.
But,its kinda loud,when it runs.Kinda like an old ford.At night,i wake up,and i hear the motor purring,it is like .I have an old ford fairlane running im my kitchen.And I am consoled by the realization that my frozen tomato sauce and meat are safe,and my precious butter that I am keeping in that machine for future survival.I keep my beer under the sink,but I keep my pop in the machine.The condiments and pickels I regard as an American right .Like nuclear bombs.
I could buy a silent machine for about 4 or 5 hundred dollars.or a cool new wonderful overunder machine for about 1000 dollars.I am poor,If i had 1000 dollars,I would not buy a refrigeration machine.So I respect my machine.
Long ago,my grandmother had a root cellar,That meant that they had a kind of man made cave,in the side of the hill.they built a doorway,and you kept you food in cold storage in  there.of course ,you need a hill to do build a root cellar.You had to go into  door in the hillside just  to get some butter.There was no light,in the root cellar.only dark ,and cold,and some shelves to keep you butter and milk and you eggs,and your tea.
In the 19th century and half way throught the 20th,all over America,mothers would say ,katey,run out to the root cellar and fetch me some tea.Or,run out to the root cellar and fetch me some butter.If you had a nickel for every time some mon asked her daughter to "fetch me some tea'I could actualy buy a nice place in china ,or wyoming..The reason tea was so popular is because they didnt have pop,or 6 packs,or sport drinks.times were tough,you had to make your own tea,and then keep it cold in the root cellar.My grandmother always dreamed that when she grew up one day that she would have her own root cellar in which to keep tea cold.And store bought butter,even though she never cared for it.but along with technology comes freezer burn.and unto the world was born ,tuperware.
